That’s more complex than what I do at work or would do at home but I’m certain it’s worth it. That sounds great. For a marinara I just blend half tomato paste and half steed tomatoes with salt pepper oregano and fresh basil. I make it cold and then add stuff like garlic and whatever to the dish I’m making before adding sauce. Some stuff is best done on the pan when making the dish than in the sauce and the more basic the sauce the easier to make a big batch and use it for different meals.it sounds like a good recipe for an all in the sauce kinda thing however and thst doesn’t have it’s own values in regard to convenience. I’ll do a simple sauce and roast my garlic and fry my veggies in the pan cause I cook for a job and sauteeing some veggies is really no biggie for me and I can do a fantastic job of it thst makes a huge quality difference and let’s one sauce be several. Something to keep in mind as you journey. Don’t fear a thr pan, frying veggies especially is super quick for that stuff you want hot and fast

I am also kinda glad it’s only gonna be 2 seasons cause I like stories that end but it also kinda sucks that good star wars is probably gone again after this. Good star wars ended last time in 1980 before andor blew that shit out of the water. I love the original movie to death but it’s cause I really like 70s Sci fi movies so the slower pace and robots walkimg around a desert is totally my shit. Empire is great but has huge pacing issues. Too fast at the start and then goes to a crawl post both and then a super fast ending. Return of the jedi sucks. The prequels suck but I find how and why they suck to be infinitely interesting. Clone wars sucked. Sequels were a mid movie a movie that should have gotten one more script pass over to tighten things up but was otherwise promising that is somehow the most controversial piece of media ever and the worst thing ever projected on a screen according to almost everyone. I’d love to see Tony Gilroy do an original Sci fi after this

I rewatched Rogue One after watching season 1 of Andor again before the 2nd season and in Rogue one Andor (the character) mentions the jedi, which means he knows about them by Rogue One which kinda scares me for this season. Think it’s gonna turn out that Luthen is a jedi, I hope not and that line in Rogue One goes on to not make any sense.

Get hired at a different restaurant and start on my time off, show up and do literally nothing, get fired and get paid for the shift. I can get a trial shift booked enough places to defray the cost. Canadian elections are hilarious. I guess it’s in 2 days, I think it got called in late March? The news about polling and stuff is really only there for the nwrds who look for it. I’m pretty sure a good amount of non voters are just cause they didn’t know there even was an election or what level it’s on. You just kinda see signs go up and then Google if it’s municipal, provincial or federal and then see the vote is in like 3 weeks.

Same mindset. A dude was asking me how to improvise a tomato soup when all of our canned tomatoes were used to make pizza sauce. I just made up a nice tomato basil soup recipe using some pizza sauce and fresh tomatoes blitzed down and reduced. This guy thought I was i was basing any of this on anything, I was pulling it out of my ass entirely. I just kinda made up measurements on the fly cause I don’t measure shit. When doing food costing we had a little contest to see who could eyeball the best by taking what we think is the right amount, weighing it and seeing how close to the official weight we got. I got over half the stuff exactly to the gram. Also means I get to make the things I like making cause I never write shit down or see what my eyeball measurements are in real numbers so others know beyond incredibly vague instructions. I assume others have a sense of good and will know what ‘add a bit more of x’ means roughly. I am often wrong and forget that many people are way more comfortable with full instructions, one dude wants to do culinary school and make a career of it so I’ve been trying to help him get in that kick cause it saves a shitload of time and trust in yourself and your abilities, anyone can follow a recipe, a good career cook can be told ‘make X’ and they can just make an X and it’s good.
