This is another forgiving non-recipe recipe, make it how you like it. I’ve made it before with beef and fish (tilapia) and it’s been in my family’s meal rotation for a few years now. Yum! Serves 2 kids or 1 adult.
Looks yummy! I’d call it a taco, because with fajitas, the tortillas are usually served on the side, and quesadillas usually have more cheese than protein/veggies.
Also if you like chicken and bell peppers you should try a dish called pechuga alambre; it’s so good and similar to fajitas but has cheese and bacon on top
Quesadillas are actually defined by being folded over and grilled till crispy, not just by cheese content (tho the name literally has “queso” in it lol) - in some parts of Mexico City they don’t even require cheese to be called a quesadilla!
